The earth and its resources, plants, and animals, are all for man’s use, then and today. Animals are for the service of man, not the other way around.
With authority and dominion, though, comes responsibility. As God is a good and gracious ruler over the world, so are we to be in our role. There is an inherent accountability in the command to “subdue” the earth. Our dominion is a stewardship, and we will give account for how we discharge it.
As far as using animals in entertainment, if it is done ethically and responsibly, I don’t think it violates any scriptural principle.
